Sevruga caviar - Acipenser stellatus - is one of the world’s most revered caviars and one of the least forgiving when it comes to distraction. The roe are small at 2.4-2.8mm, pearlescent grey in colour, with a soft, creamy texture. What they lack in size, they entirely make up for in intensity: a strong, briny flavour that opens immediately, coats the palate and gives way to a long, exquisite finish that lingers long after the last bead has gone.

Native to the Caspian Sea Basin, and sustainably farmed in Italy, Sevruga has a flavour profile unlike any other in our range. If DaVinci is the purest expression of the ocean, and Beluga is rich and deep, Sevruga sits in between the two - briny like the former, rich and finishing like the latter, but with a finesse entirely its own. It is best tasted on its own, with a small spoon, with nothing competing for your attention.

How does Sevruga compare to Beluga or Osetra?

Sevruga is the most intensely briny of the three. Where Beluga opens with an umami richness and a deep, lingering body, and Osetra offers a creamy nutty complexity, Sevruga leads with a clean, assertive brine - aromatic, precise, and immediately recognisable.
The eggs are smaller and softer, but the finish is just as long, which is part of what makes them so prized by connoisseurs. If Osetra rewards patience, and Beluga commands the room, Sevruga demands your full attention - and rewards it completely.
