Sevruga caviar—Acipenser stellatus—is one of the world's most revered caviars, and among the least tolerant of distractions. The eggs are small, 2.4 to 2.8 mm, with a pearlescent gray color, and a soft, creamy texture. What they lack in size, they more than make up for in intensity: a sharply saline flavor that opens immediately, coats the palate, and gives way to an exquisite and prolonged finish that lingers long after the last pearl.
