Sevruga caviar — Acipenser stellatus — is one of the world's most revered caviars, and one of the least forgiving of distraction. The pearls are small (2.4-2.8mm), pearlescent grey, with a soft, creamy texture. What they lose in size, they entirely make up for in intensity: a powerful saline flavour that opens immediately, coats the palate, and gives way to an exquisite, long finish that lingers long after the last pearl.
Hailing from the Caspian Sea basin and sustainably farmed in Italy, Sevruga carries a unique flavour profile within our range. If DaVinci is the purest expression of the ocean and Beluga is richness and depth, Sevruga sits between the two — saline like the former, rich and long-finishing like the latter, but with a finesse all its own. It is best enjoyed alone, by the spoon, with nothing to detract.
How does Sevruga compare to Beluga or Osetra?
Sevruga is the most intensely saline of the three. Where Beluga opens with umami richness and a deep, lingering body, and Osetra delivers creamy, nutty complexity, Sevruga leads with a clean, assertive salinity — aromatic, precise, and immediately recognisable.
The pearls are smaller and softer, but the finish is just as long, which is part of why it is so highly esteemed by connoisseurs. If Osetra rewards patience and Beluga demands presence, Sevruga demands your full attention — and fully rewards it.
